FRESH CRABS, A NEW VIEW AND A NEW RESTAURANT - A GOOD SIGN OF SUMMER

CRABS ARE shedding and local restaurants are featuring them nightly. The Ships Cabin, 4110 E. Ocean View Ave., Norfolk, 362-4659, is sprinkling them with corn meal, sauteing them in olive oil and serving them with corn-pepper relish. At Todd Jurich's Bistro!, 210 York St., Norfolk, 622-3210, they might be sauteed with rice noodles or floured and fried in a tangy salad. On the Oceanfront, Timbuktu, 32nd Street and Atlantic, 491-1800, sautes them for an appetizer or fries them for a main course. And crunchy fried soft-shell sandwiches are offered all over town. Eleanor's view

The view from the dining room of the Strawberry Banks Motel just across the Hampton Roads Bridge Tunnel in Hampton is now Eleanor's. Owner Jim Adkinscq named the restaurant after his mother, whom he describes as ``my mentor and my biggest fan.'' Adkins promises fresh fish and says his kitchen has no freezers or microwaves. For dinner, an extensive seafood menu is supplemented by pasta, chicken and several meats. Sunday brunch is moderately priced, lunch offerings are varied, and breakfast is traditional. Phone 723-6061.

Maude's move

The charming two-story building at 313 W. Bute St., long known as the Carriage House, has been home to several restaurants. Since February, it has been Maude's House. Chef-owner Heather Whitehead redecorated the interior, opened the upstairs dining room, and assembled a menu of soups, salads, and sandwiches - specialties at her former location on Boush Street - plus seasonally changing dinners. Recently, osso buco, charred chicken and basil linguine were among the offerings. Phone 622-4990. MEMO: A la carte is published in Flavor every other week, as space
